Sandton Welcomes The Catalyst Hotel’s Kashew Restaurant

The Catalyst Hotel has welcomed its new eatery the Kashew Restaurant – a glamorous new spot in one of Sandton’s latest hotels headed up by executive chef, Justin Jonah.

Kashew Restaurant is nestled in Sandton suburbia with a hanging plant ceiling, open spaces, and a deck area for sundowners or post-work cocktails. At the center, the restaurant features an all-round bar, with an all-day dining menu to compliment the specialist breakfast and dinner menu.

 

The executive chef, Justin Jonah, who was previously the executive chef at The Maslow, has created a launch menu featuring dishes that speak to different flavour palates, but carry through the thread of Kashew’s signature flavour, look and feel.

The dishes are predominantly Mediterranean, influenced by my personal culinary journey over the past 30 years. The dishes all have a story and a memory and have journeyed and evolved with my personal style of cooking to become what they are today – and what you’ll find on the menu at Kashew.

And the food is really good. The poke bowl features sushi rice, baby spinach, crispy Kung POW salmon, pickled ginger, crispy fried onions, purple Asian slaw, wasabi kewpie mayonnaise, and baby shoots, dressed with a soy, chili, lime dressing.

 

The grilled Norwegian salmon comes with a garlic beurre noisette, roasted cauliflower steak, asparagus spears, and a dill beurre blanc sauce. A popular vegetarian dish is the Aubergine Rotolo, which features grilled aubergine stuffed with spinach and ricotta, baked with Parmesan, served with smoked tomatoes and rocket.

Diners can expect to find the occasional “special” off the main all-day dining menu, which has been newly updated to include the Pan-fried Mozambique Prawn Pasta, with rich tomato chili linguine, lime, fresh dill, Parmesan lashings, and rocket.

I personally love cashews and know they’re a delish snack on the menu. We also make chocolate bark with cashews and soon we will be making cashew cheese and cashew nut butter!

The restaurant is also an exhibition center of local artists from upstART galleries, with diners surrounded by inviting paintings that are changed up on a weekly basis. It is intimate yet personal and nothing pretentious.

The art is really one of our big attractions at Kashew Restaurant. The space works as an ever-changing gallery.

Expect to find works by Jibril Linjoum Achu – who hails from Cameroon and sold his first painting at age seven and exquisite paintings by Teboho Makoatsa.
